Why Mirror Edge?


A mirror edge is the finest refinement of the honing process of getting the knife sharp. It provides a smoother and clear cut, as well as the ability to push cut and shave - much like shaving hair. This highly refined edge outperforms in a variety of tasks such as chopping, carving or shaving.


Mirror edges don’t tear or crush food, ultimately providing a more pleasing looking plated dish. It is great for knives that are used for detailed work with delicate foods such as fish and vegetables.


Home vs. Professional Sharpening

Why would I pay for my knives to be sharpened when I can use this inexpensive sharpener I bought at the big box store?


Sharpening your knives at home with a sharpener purchased at the store may temporarily sharpen your knives but can ruin your knives very quickly.  When you use a pull-through knife sharpener, it actually tear away metal from the edge and leaves the edge not smooth and refined. This creates microscopic imperfections which are sharp for a brief period of time and dull quickly.


These types of sharpeners only sharpen at one angle, while a majority of knives have different angles that need to be used.  Because of this, the pull-through sharpener, actually remove more metal than they need to and ruining the factory bevel,  so not only do the knives get dull quicker, but they will need to be replaced much sooner.
